During my elementary and middle school days, my school did not have a food program, so students would have to bring their own lunches. For a period of time, every week my dad would make my sister and I our own personalized pizzas, including the dough and sauce from scratch. He would take every Sunday to prepare pizza for us for the whole week. I have always appreciated his hard work and dedication to preparing homemade meals for our family. In this recipe I will include my dad’s pizza dough recipe from the Joy of Cooking, the sauce recipe included at the end and toppings are all up to your liking.
Ingredients
- 1 1/3 cups of warm water
- 1 packet (2 1/4 tps) yeast
- 3 1/4 to 3 1/2 cups AP flour
- 2 tbs olive oil
- 2 tsp salt
- Pizza sauce of your choice (can be store bought or see below for instructions)
- Toppings: Mozzarella, chicken, peperoni, salami, prosciutto, olives, bell peppers, pineapple, etc
Directions
- Put 1 1/3 cups of warm (not hot) water in a large bowl and add one packet (2 1/4 tps) of yeast. Mix and wait 5-10 minutes until you see some bubbles.
- Add 3 1/4 to 3 1/2 cups of AP flour, 2 tbs olive oil, and 2 tsp salt. Mix with your hands to make a dough, kneading for 10 minutes.
- Once kneaded, rub the inside of a large bowl with oil, put the dough in, cover with plastic wrap or a towel and let it sit for at least 90 minutes. When it’s doubled in size, it’s ready for the next step.
- Once doubled, punch the dough to deflate it, and break it into two pieces. Roll each piece into a ball and let it rest for 15 minutes.
- Each of these balls of dough will make one 12″ pizza. My dad normally bakes on a baking sheet (or even a cookie sheet, but the heavier the better), but a pizza pan is good too. You can bake just one and freeze the other if you’d like.
- Put some flour on the counter and spread a ball of dough out into a circle or rectangle by flattening and pushing outward with your fingers. When stretched out, put onto the pan or sheet. (Dusting the pan or sheet first with cornmeal is nice.)
- Pinch the edges with your fingers to make a lip, and press your fingers into the dough’s surface to dimple it, which helps prevent bubbles. Brush top with some olive oil so the toppings wont stick.
Homemade Pizza Sauce
- Onion
- Garlic,
- Green pepper
- 28 oz can of crushed tomatoes
- Add salt
- Pepper
- Oregano and anything else you’d like
For a topping, you can simply use a jar of pasta sauce and slice/ shreds of mozzarella, plus some salt and pepper.
Add meat and veggies as you like. If you pre-cook the meat, the pizza won’t be so greasy.
Lastly baking, heat oven to 475F and when ready bake the pizza for about 12 minutes. Enjoy your own personal pizza!
