Easy Mango Sago

Love tapioca pearls and looking for a way to cool down this summer? Try out this cooling mango sago recipe that includes coconut milk!

This quick and easy sago recipe can be mixed with mango and coconut milk or with other fruit flavors. The sago can also be included into other sweet treats such as Halo-Halo, boba, pudding and more!

Ingredients

  • 1 pack of small tapioca pearls (you can find them at your local Asian supermarket)
  • 2 mangoes
  • 1 can of evaporated milk
  • 1 can of coconut milk
  • 1/2 can condense milk

Directions

  1. First make the milk mixture for the sago pearls, I combined evaporated milk, coconut milk and a little bit of condense milk to make the mixture. After stirring the milks together, set aside in the fridge to keep cold, I had some milk mixture left over from the tres leches cake and I ended up just using this as it has similar ingredients.
  2. Next cook the tapioca pearls, follow the directions on the back of the package. The first time I made this I ended up using about half of the bag. Boil some water in a pot or pan and wait for it to boil.
  3. Make sure that you have enough water, at first I put too many pearls at once and not enough water. I would recommend to add the pearls a little at the time to combat having too many. You can always add more later but just make sure that it’s not too much later as then the pearls will have different cook times.
  4. Also, I like to keep a little water near buy as when the pearls start to cook, they expand and need more water. I like to pour the water around the edges as this helps the pearls not stick too much to the side of the pan.
  5. Cook the pearls for 15-20 minutes or until they become transparent (ie as you cook the pearls, they will expand and the once solid white color will start to shrink). Continue to stir continuously as the pearls will start to stick to the bottom of the pan.
  6. Once most of the pearls are clear, if you have any access water try and drain out as much as you can and let the pearls cool down before adding them to the milk mixture.
  7. While the pearls cool down, cut you mangoes. For this recipe I like to cut my mango into cubes but you can also slice them if you would like.
  8. Once the pearls have cooled down, you can add the rest of the ingredients together, the milk mixture, tapioca pearls and mango and that’s all there is to it. You can keep any leftovers in the fridge for later as it will stay cool and is a nice treat to beat the summer heat.
