Mango Sticky Rice

If you love mangoes and sticky rice, then this is a recipe for you. Slightly sweet sticky rice with fresh ripe mangoes is a perfect combination.

I have always loved mangoes as well as sticky rice, thus this recipe is a perfect way to combine two of my favorite ingredients together into this warm, coconut-y, treat. This is the first time I tried making this, I am unsure if it is considered the proper / traditional way to make this but I tried my best with what I had on hand. For example, there are a couple of different ways to steam the sticky rice such as using a traditional steamer basket. I did not have this and instead resorted to using my basic rice cooker. Ingredients

  • 1 bottle of RiceSelect brand sticky rice (I used the whole bottle about 32oz)
  • Equal parts water to rice + a little bit more for cooking
  • 1 can of coconut milk
  • 4 ripe mangoes
  • 1 can of condense milk
  • Sesame seeds for topping

Directions

  1. First, wash your sticky rice, I washed mine at least 3 times. Then you should soak the sticky rice in water for at least 4 hours (any less and it won’t be as good) or over night for better results.
  2. After soaking your rice, to cook mine I used my basic rice cooker which only has two functions, cook and warm. I filled the rice cooker with equal parts of water plus a little more in order for the rice not to dry out. I then cooked it and prayed for it to turn out not under cooked or over cooked.
  3. While the rice cooked, I combined some of the coconut milk with condense milk to create a coconut milk mixture. Once the rice was done cooking, I carefully pour some of the coconut milk mixture into the sticky rice. I did not use the whole mixture as I did not want to over flood the rice but instead make it slightly wet.
  4. Lastly, I peeled and cut the mangoes. You can cut them into slices or cubes, which ever you prefer.
  5. To top off the sticky rice, I added a drizzle of condense milk and sesame seeds to top it off.
  6. Enjoy warm 🙂
